Sugar-free No-Churn Strawberry Icecream Recipe



Thick, creamy yet not-too-sweet recipe for those who's obsessed with icecream but wanting to cut back on sugar level. End-of-season, ripe strawberries are best for this recipe. Sweeteners used in this icecream are ripe bananas and honey, in just a very small amount so your end-result won't taste too banana-y, don't worry.


Ingredients:

  • 1/2 cup ripe banana

  • 1.5 cup fresh or frozen ripe strawberries

  • 1/3 cup honey

  • 1/2 cup milk of your choice

  • 1 cup whipping cream

  • Pinch of salt

Note: You can substitute whipping cream for a non-dairy creamer or coconut cream if you're vegan




Instructions:

  • Put all ingredients except whipping cream in a blender, blend well until smooth.

  • In a bowl, add your chilled whipping cream (or non-dairy creamer/coconut cream) and mix with a hand-mixer until soft peak forms.

  • Add 1/3 of strawberry mixture in the cream bowl, mix gently on low-setting until combined. Repeat this step with 1/3 strawberry mixture, then the rest.

  • Transfer your icecream to a shallow container or a tray.

  • Put in freezer until solid.

  • Served with some nuts, fresh mint or basil leaves and extra honey drizzle to your liking.
