Toasted Rice Milk Recipe

This drink is already quite popular here in Vietnam (and of course in Korea too!) hence there are many recipes. However, after many times experiencing with making ricemilk, I usually come across a few common problems: rice ratio is too much, milk is too thick that it looks like porridge… I like this recipe because the ratio is perfect: result comes out with the right consistency and milk smells fragrant!

Ingredients
1/4 cup white rice
1/3 cup brown or red rice
1/4 cup condensed milk
1 cup regular milk or coconut milk
1.5L water
1 tsp vanilla extract
Sugar (optional – to taste)
Cocoa powder (optional – to taste)
Directions
Rinse the rice under running water, then toast it on a pan over medium heat until the rice is all dried. Lower the heat to low, stir constantly until brown rice pops, white rice is golden brown and everything smells fragrant. Turn off the heat.
Boil water with condensed milk. Let the mixture boil for 30 seconds, turn off the heat. Add toasted rice, milk, vanilla extract, and more sugar if you’d like.
Let the rice sit for 15-30 minutes or until rice is a bit soft.
Blend the mixture for about 30 seconds, strain it in a cheese cloth. Keep the pulp to make rice porridge or toast/fry it over the stove to eat as snack.
Can be served cold or hot (I like it cold). You can sprinkle some cocoa powder to enhance the flavor.
