Roasted Garlic Tomato Salsa Recipe


Naturally sweet, savory and fragrant healthy dip. This hearty homemade salsa serves as a great topping for almost any meals for snacks, movie nights or party nights. Roasted salsa recipe is easy for you to make ahead, store and eat it throughout the week. You can serve this with traditional tortillas or other homemade savory crackers. Ingredients

  • 5 roma tomatoes, halved

  • 1/2 medium white onion, halved

  • 10 garlic cloves

  • 1-2 tablespoon oil

  • 1 jalapeno or any chili you can find, halved and seeds removed (remove if you can't stand the heat, or leave the seeds on if you can tolerate spicy food)

  • 1/2 teaspoon salt

  • 1/4 cup fresh cilantro



Instructions

  • Preheat your oven to 220 degrees C.

  • Line tomatoes, white onion, garlic gloves and chili on a baking pan. Drizzle some oil and massage it so that it coats every pieces.

  • Bake at 220 degrees C for 25 minutes.

  • Let it cool, transfer to a food processor along with salt, cilantro and blend roughly. (not too long, you don't want it too smooth and fine)

  • Transfer to a clean glass container. Store in fridge for 5-7 days.
